St Davids Gin was born from a deep connection to one of the most extraordinary places in Wales.
Founder Neil Walsh is a true St Davids boy. His family has lived in the city for at least eight generations, which pre-dates the signing of the Deceleration of Independence 250 years ago.
After building a successful digital marketing business in London, Neil returned home and entered the world of food and drink, opening St Davids Kitchen in 2016.
It was there that the idea for St Davids Gin began.
A small batch of just 400 bottles, created using local botanicals, was introduced at the restaurant. It quickly outsold the major international brands on the back bar. The message was clear: there was something special about creating a spirit that genuinely captured the character of St Davids.
Working alongside renowned master distiller and spirits consultant Jamie Baxter, the team developed their own distinctive range of Welsh spirits, inspired by the rugged coastline, native botanicals and the wildlife of the Pembrokeshire peninsula.
Today, St Davids Gin is proudly independent, fiercely connected to its home and ambitious about its future.
From our tiny city on the western edge of Wales, we're taking St Davids Gin to the world, sharing our story, our landscape and a taste of Wales with customers across the globe.
